Crispy Aloo Parwal (Potato-Pointed gourd) Bhujiya Recipe

When there is no much time for cooking a gravy curry and you need something which can easily replace curry recipe, then try this bhujiya. It can be served with rice or any flatbread, I’ve used mustard oil in this preparation, those who wanted to add onion they can add. Let’s learn step by step process to prepare this recipe.

Crispy Aloo Parwal (Potato-Pointed gourd) Bhujiya Recipe

  • 1 cup Thinly sliced or julienne pointed gourd
  • 1/2 tbsp Thinly sliced potatoes
  • 1 cup Mustard Oil
  • 1 tsp Turmeric Powder
  • 1 tsp Sendha namak (Rock salt) (As per your taste)
  1. Heat oil in a pan.
  2. Add potatoes in the pan when oil starts emitting vapors.
  3. When potatoes starts to change color then add pointed gourd.
  4. As we are making crispy bhujiya so we will not cover the lid while cooking, as it will make them soft.
  5. Add salt and turmeric powder.
  6. Keep stirring and the recipe is almost done now, put the pan little tilted so that extra oil get settled on the other side of the pan.
  7. Take it out on kitchen towel and serve it with rice, lentils or chapatis.
