Mango Sweet And Sour Achar (Aaam ka khatta mitha achar) Recipe

Mango sweet and sour pickle is almost similar as Guramba/mango khatmitthi recipe the only difference is various concoction of spices and salt into it. Let’s learn step by step process to prepare this recipe.

Mango Sweet And Sour Achar (Aaam ka khatta mitha achar) Recipe

  • 2 Pieces Raw Mangoes
  • 1 tbsp Turmeric Power
  • 1 tsp Dried Fenugreek Seeds
  • 1 tsp Funnel Seeds
  • 1 tbsp Coriander Seeds
  • 1 tbsp Cumin Seeds
  • 1 tbsp Yellow Mustard Seeds
  • 1 tbsp Ajwain (Celery seeds)
  • 1 Piece Bay leaf
  • 2 Piece Dried Red Chili
  • 1 tbsp Black Salt
  • 1 tsp Kalonji or Mangrail, Black Caraway, Nigella,
  • 1 tsp Asafoetida
  • 2 cup Jaggery
  • 1 tbsp Mustard Oil
  1. Take all the ingredients in the proportionate quantity as mentioned in ingredients list.
  2. Dry roast them.
  3. When they cools down grind them.
  4. Take half inch cut and peeled mangoes in a container.
  5. Add salt and turmeric powder into it and mix them well.
  6. Mix the spices we have prepared.
  7. Take few more ingredients as shown in the image.
  8. Heat a pan and add mustard oil into it.
  9. Add dried red chili and bay leaf in the pan.
  10. Add funnel seeds in the pan and let them tamper.
  11. Add spiced mangoes in the pan and let them cook unless they turns soft, or one can boil them and then add into the pan.
  12. When they turns soft then add jaggery and cook them again for a while.
  13. After few minutes the recipe is ready to be served.
  14. When it cools down properly then add it in a jar, it will remain fresh for 3 months. If refrigerated then time span may increase.
