Pedakiya/Gujiya Recipe (With Three Different Fillings)

For welcoming Haritalika Teej festival I prepared pedakiya giving it a twist and tried different fillings to make it more delicious. Let’s learn step by step process to prepare pedakiya recipe.

Pedakiya/Gujiya Recipe (With Three Different Fillings)

Dough preparation

  • 1 Kg All Purpose Flour (Maida)
  • 3 tbsp Clarified Butter (Ghee)
  • 1/2 Cup Water

For Khoya Filling

  • 1/2 Kg Khoya (Dried Whole Milk)
  • 1 cup Sugar
  • 2 tbsp Resins
  • 2 tbsp Cashew nuts
  • 1 tbsp Desiccated Coconut
  • 2 Piece Crushed Cardamom

For Coconut Filling

  • 1 cup Chopped Coconut
  • 1/2 cup Sugar
  • 2 tbsp Resins
  • 2 tbsp Cashew nuts
  • 2 Piece Crushed Cardamom

For Khoya and Semolina Filling

  • 1 cup Semolina
  • 4 tbsp Khoya (Dried Whole Milk)
  • 2 tbsp Resins
  • 2 tbsp Cashew nuts
  • 1 tbsp Desiccated Coconut
  • 2 Piece Crushed Cardamom
  • 1 Liter Vegetable Oil/Ghee (Clarified Butter)
  1. Take all purpose flour and add clarified butter mix it well with hand.
  2. Flour should be mixed well so that proper consistency of dough can be prepared.
  3. Knead dough as shown in the image.
  4. Cover it with wet cloth and put it aside.
  5. In a pan add khoya (Dried Whole Milk) and let it sear so that it can turn golden brown.
  6. Add resins, cashew nuts, crushed cardamom, desiccated coconut and sugar in the khoya mixture after turning off the flame and mix them well.
  7. The Khoya filling is ready.
  8. Take chopped coconut in a grinding jar and take a whirl around so that it can turn smooth but not fine, it should be coarse.
  9. In a pan heat a tbsp of clarified butter, and add coarse coconut and roast it, add resins, cashew nuts, crushed cardamom and sugar and mix it well, turn off the flame.
  10. Coconut filling is ready.
  11. In a pan add semolina and dry roast them unless turns golden brown.
  12. Add 5 tbsp of khoya (Dried Whole Milk), resins, cashew nuts, crushed cardamom, and sugar and mix it well.
  13. All the fillings are ready to be used for preparing pedakiya recipe.
  14. Take dough and divide it into small bolls and prepare flatbread shapes with the help of rolling pin and rolling board.
  15. Apply water on the edges of flatbread and put the desired filling above it and prepare pedakiya.
  16. Give it different shapes as per your choices.
  17. Final filled pedakiya is ready to be fried.
  18. When it turns golden brown from both the sides then it it ready to be taken our from the pan.
  19. Let it cool down, and it is ready to be served as well as preserved.
  20. Serve it anytime but preservation should be done in a air tight jar, enjoy the delight on this festive season.
