Samosa Recipe (Without Onion-Garlic)

Samosa is very common street food of India, but its history is really very interesting as this snack travel from several countries and finally reached to India. So few of us may get perplexed after knowing that this recipe traveled here from all the way to Central Asia. But now it has a great grip in our culture, I’ve prepare this recipe without adding onion and garlic as most of the people from India who follows spirituality often avoid these ingredients from their intake of meal, as it is considered as tamshik (तामसिक). Let’s quickly learn step by step process to prepare this delicacy.

Samosa Recipe (Without Onion-Garlic)

  • 1/2 cup Wheat flour
  • 1/4 cup All Purpose Flour (Maida)
  • 1 tsp Ajwain (Celery seeds)
  • 1 tsp Kalonji or Mangrail, Black Caraway, Nigella,
  • 1 tsp Baking Powder
  • 1 tbsp Salt
  • 1 tbsp kasoori Methi (Dried Fenugreek Leaves)
  • 1 cup Oil
  • 1 cup Boiled and mashed potatoes
  • 1 tbsp Peanuts
  • 1 tbsp Peas
  • 1 Pinch Asafoetida
  • 1 tbsp Chopped Tomatoes
  • 1 tbsp Chopped green chilies
  • 1 tbsp Cumin Seeds
  • 1 tsp Coriander Powder
  • 1 tsp Turmeric Powder
  • 1 tsp Kashmiri mirch powder
  • 1 tsp Sabji masala powder
  • 1 tbsp Coriander Leaves

For outer covering

  1. Take half a cup wheat flour and one forth cup all purpose flour and combine them together.
  2. Add dried fenugreek leaves, ajwain, salt and mangrail and mix them together.
  3. Add oil and combine them together, finally add baking soda and mix them so that if you hold the flour with hand then it will show a dumpling as shown in the image.
  4. Add water slowly and prepare a dough as shown in the image.
  5. Cover it with wet cloth and let it rest for 20 minutes.

For the fillings

  1. Roast peanuts in oil and put it aside.
  2. In the same pan add a tbsp of oil and add asafoetida.
  3. Add cumin seeds followed by tomatoes, peas and chopped green chilies.
  4. Add salt, coriander powder, turmeric powder, salt, kashmiri mirch powder, cumin powder and sabji masala powder in the same pan.
  5. Add peanuts and mix them together.
  6. Add coriander leaves and turn off the flame.
  7. With the help of masher, mash them, and the filling is ready.

Samosa preparation

  1. Divide the dough and prepare the dumpling as shown in the image.
  2. With the help of rolling pin and rolling board prepare flatbread and cut them into equal halves as shown in the image.
  3. Take half of it and apply water on the edges of it.
  4. Fold and stick them as shown in the image.
  5. Put the fillings as shown in the image.
  6. Hold its back and fold a little as shown in the image.
  7. Samosa is ready.
  8. Heat oil in another pan and deep fry them.
  9. Put it on the kitchen towel and let the extra oil get soaked in the towel and serve it with your favorite chutney.
