Sattu (Roasted Gram Flour) Kachori Recipe

Sattu (Roasted Gram Flour) Kachori is very famous in the Northern and Eastern part of India. It is very simple to cook and tastes delicious. It can be prepared in several ways, I have made the party version of the sattu kachori recipe, here I have prepared a special paste to be applied on the chapatis to make it more crispy and flaky. Using all-purpose flour makes it more delightful and smooth in texture. In Bihar, this recipe is generally prepared for packing it to the travellers, as it requires nothing else except pickles. It can barely require any side dishes. Let’s learn step by step process to prepare this recipe.

Sattu (Roasted Gram Flour) Kachori Recipe

  • 1 cup Roasted Gram Flour (Sattu)
  • 2 cup All-Purpose Flour (Maida)
  • 2 tbsp Clarified butter (Ghee)
  • 2 pinch Celery (Ajwain)
  • 2 pinch Kalonji or Mangrail, Black Caraway, Nigella,
  • 1 pinch Baking Soda
  • 1 medium Onion
  • 4 cloves Garlic
  • 2 tbsp Salt
  • 2 pinch Amchoor Powder
  • 1 piece Lemon
  • 2 tbsp Chopped Coriander leaves
  • 2 piece Green Chili
  • 1 cup Water
  1. Knead all-purpose flour using 1 tbsp of oil, a pinch of celery, a pinch of kalonji and a pinch of salt and half a cup of water

  2. Take the ingredients as shown in the image

  3. Prepare filling by Roasted gram flour and add 1 tbsp of salt, 1 pinch of Amchoor powder, a pinch of celery (Ajwain), a pinch of kalonji, juice of one medium size lemon, one chopped onion, 4 cloves of chopped garlic, 2 chopped green chilli and 4 tbsp of water

  4. Take ghee in a bowl and a tbps of dry all purpose flour and make a paste to spread on chapatis

  5. Divide dough into 4 round balls using rolling board and rolling pin make small chapatis.
  6. Cover them using ghee and all purpose flour paste and wrap it as shown in the image
  7. Then again roll it using rolling pin and put the filling inside
  8. Then wrap it as shown in the image
  9. Heat the oil and fry it on medium to low flame
  10. Serve it on kitchen towel with your favourite chutney, sauce or mayonnaise
