Whole Wheat Malpua recipe | Atte ka malpua

Pua or malpua is one of my favourite sweet dish, which is being served to us for generations. Malpua / pua is a dessert famous across India, especially in the northern, easter region. In Bihar it is cooked specially in Holi festival. Various versions of malpua are also relished during the festival of Holi and Diwali in India. Traditionally, these are fried pancakes, made using a fermented batter of all-purpose flour and milk (even evaporated milk, or milk solids), and flavouring of fennel seeds, saffron or cardamom powder. Once fried, these are then dipped in sugar syrup and served hot or cold.

My grandmother used to cook milk pua which was either dipped into milk or sugar syrup, but today I am preparing the instant version of pua. Here I am using wholewheat flour, demerara sugar, and clarified butter just to make it more healthy.

The term mal is being used due to mawa and dry fruits being used in this recipe. Let’s learn step by step process to prepare this recipe.

 

Whole Wheat Malpua recipe | Atte ka malpua

  • 1 Cup Wheat flour
  • 2 Pieces Banana
  • ¼ Cup Roasted mawa or khoya (Milk solids)
  • ¼ Cup Demerara sugar
  • 2 Pods Cardamom
  • 1 Cup Milk at the room temperature
  • ¼ Cup Clarified butter
  • ¼ Cup Semolina
  • ¼ Cup Assorted dry fruits
  1. In a grinder jar add sliced bananas, roasted khoya, cardamom pods & demerara sugar.



  2. Take a whirl around.



  3. Add Wheat flour and milk, again grind it.



  4. Transfer the ingredients to a container.



  5. Add semolina and mix it well. This process will make it crispy.



  6. Add assorted dry fruits and mix them well.



  7. Cover and let it rest for 20 to 30 minutes.



  8. Heat clarified butter and with the help of a ladle prepare the pua.



  9. Cook from both sides.



  10. Serve it.
