Mixed Vegetables| Side dish | Curry for lunch, breakfast & Dinner
Today I am sharing a very simple and delicious recipe with numerous veggies at hand, I just love this veggies served with chapatis or parathas. Whenever you are feeling little loath or dull, try this quick and easy side dish. Here’s the fastest way to get colorful veggies to jump onto your plate. These sauteed vegetables are beautifully colored, bursting with flavor and crisp tender in texture. They’re the perfect side dish and some Indian spices makes it more tangy and flavourful. Let’s learn step by step process to prepare this recipe.
Mixed veggies stir fry | Side dish for Breakfast, lunch or dinner
- 1 Cup Mushroom
- ½ Cup Spinach
- 1 Piece Each colourful sweet mini peppers
- 2 tbsp Chopped onion
- 1 tsp Each chopped ginger and garlic
- ¼ Cup Carrot Julienne
- 1 tbsp Chopped tomatoes
- ½ Cup Cottage cheese (Paneer) (Boiled )
- ¼ Cup Chopped beans
- ½ tsp Cumin seeds
- ½ tsp Oil
- ¼ tsp Crushed Black pepper
- 1 tsp Salt (to taste )
- ½ tsp Turmeric powder
- 1 tbsp Coriander powder
- 1 tsp Garam masala powder (For mixing it in the end)
- 1 tbsp Sabji masala powder
- 2 tbsp Chopped coriander leaves (For garnishing )
Blanch the mushroom in a cup of water, then strain it and keep it aside.
Take all the chopped veggies and also include the veggies of your choice.
In a wok add 1/2 tsp of cumin seeds, splutter it using 1/2 tsp of oil, then add ginger and garlic, saute it then add onion and leti it turn translucent.
Add rest of the veggies except mushroom and paneer. Fry unless turns soft.
Add mushroom, add salt, crushed black pepper, sabji masala powder, haldi powder and mix everything well, put the lid on and cook for few minutes.
Add boiled paneer dices, add 2 tbsp of water and cover the lid on and cook it for few more minutes, then switch off the stove, add garam masala powder mix it well, garnish it with coriander leaves and the recipe is ready to be served.
