Vegetable Fried Rice with leftover rice or pre-cooked rice

While pondering tonight’s dinner options, I realized I had a stash of cooked rice on hand that needed to be used up. Faced with the prospect of preparing chapatis and two curries, I opted for a simple rice dish with mixed vegetables and a pinch of biryani spices. This savory creation became our delicious and nutritious dinner, ideal for lunches, dinner, or even packed in a lunchbox. Vegetable Fried Rice with leftover rice or pre-cooked rice

  • 1 Cup Pre-cooked rice
  • ½ tsp Cumin seed
  • ½ tbsp Clarified butter
  • ½ Cup Assorted veggies of your choice
  • ¼ Cup Boiled cottage cheese or paneer
  • ¼ Cup Roasted cashew nut
  • ¼ tsp Black pepper powder
  • ¼ tsp Salt to taste
  • ¼ Cup Chopped onion
  • ¼ tsp Ginger and garlic paste
  • ¼ tsp Shahi biryani masala or garam masala powder
  1. Heat clarified butter and add cumin seed and let it splutter.



  2. Add chopped onion and let it turn translucent.



  3. Add ginger and garlic paste and sauté it unless the rawness gets discarded.



  4. Add assorted veggies, cashew nuts, and cottage cheese or paneer and mix everything together.



  5. Put the lid on and cook the veggies.



  6. When veggies become soft then add some seasoning.



  7. Add salt and pepper along with biryani masala powder or if you don't have biryani masala add garam masala powder.



  8. Add cooked rice and mix everything together.



  9. Switch off the flame and the recipe is ready to be served.
