Rice Pudding|Kheer in Pressure Cooker|Instant Pot Kheer
Kheer or Payasam is an Indian favourite dessert for special occasions. It is basically rice pudding made with rice and milk infused with saffron, cardamom and assorted dried fruits. Traditionally making kheer meant keeping milk and rice on the stove for 2 hours and stirring it frequently until the milk thickens and becomes creamy. But using a pressure cooker which acts as an instant pot which follows the same process, but you just dump all the mess and this process makes the Kheer more creamy, aromatic, and crunchy.

Kheer in cooker | Sharad purnima special kheer
- ½ Cup Rice (Soaked )
- 1 Litre Milk
- 1 Cup Assorted dry fruits (Including cashew nuts, almonds, pistachio, black and green raisins, cardamom powder, saffron ( Optional))
- 2 tbsp Clarified butter
- ¼ Cup Sugar
In a cooker heat 1 tbsp of clarified butter.
Add assorted dry fruits and saute them.
In the same cooker add ½ cup of soaked rice.
Add dry fruits and mix them well.
Add half a litre of milk and pressure cook it with 2 whistles.
In a wok heat another half a litre of milk and add cooked rice kheer into it them cook it again.
Add 1/4th cup of sugar and crushed cardamom powder into it.
Prepare the tempering with 1 tbsp of clarified butter and few assorted dry fruits.
Add this tempering to the pudding and the recipe is ready.
Serve it.
