Chow mein & Paneer Chilli Recipe

Here I am going to share Chilli Paneer or Paneer Chilli, which needs no introduction. It’s probably one of the most famous Indo-Chinese dishes after maybe chow mein. Indo-Chinese is one of my favourite cuisines and I am seriously addicted to it. So much so that I order it just about anywhere it may be available. Indian Chinese; the one thing that I know a lot of people in India just can’t resist. From Hakka noodles, fried rice, chop suey, chilli paneer and the list go on. With Chinese techniques tailor-made for the Indian taste this unique take on a ‘desi’ version of the cuisine might not be something you’ll find in China but it’s been scoffed down by Indians as long as I can remember. Posh Indian restaurants, tonight street markets all serving some of the scrummiest dishes on offer, reasonably priced, always delicious and very satisfying.
The key is a good dose of garlic, chilli and ginger. With a good measure of soy for the salty balance, sugar and also corn flour used as a binder to thicken gravies and sauces. The flavours are robust and full-on so once you’ve tried it I can guarantee you’ll be hooked! Paneer is Indian cottage cheese and a widely used in Indian cooking not just for its amazing texture but also for the ability to absorbs spices and flavours really well while holding its own. Also, it doesn’t take too long to cook. Shop bought chilli garlic sauce is readily available but if you were to make your own do so mixing dried chilli flakes, garlic, tomatoes, a dash of vinegar ( I prefer omitting it most of the time), salt & sugar reducing the mix to a thick sauce. Once you have made the dish adjust the seasoning to your desired consistency sugar as well as salt. I am not adding spring onion to my both the recipes as It was not available in the market hence I simply omitted.
Now let’s talk about chow mein!
Veg chow mein is basically stir-fried noodles with lots of veggies. Smooth velvety noodles with crunch from the veggies. The recipe comes together in minutes, I’ve used a thin chow mein in this recipe, Vegetarian Hakka Noodles also called a Chowmein in many parts of India is a very Indian Chinese adaptation of the recipe. I had it many times but when I got the taste of thin chow mein in Ranchi with my brother in law Sanket & my hubby Pratik, I was blown into fantasy land and after that, I have continued to make it just like how they do. The only difference is I have loaded it with lots of vegetables to make it more nutritious. Vegetarian Hakka Noodles can be easily be made at home and satisfy your craving for street-style food. Serve the Vegetarian Hakka Noodles as a meal of its own or along with Paneer chilli, Today I am going to prepare both the recipes together to have a great blend of taste & flavours, let’s learn step by step to prepare both the recipes.

Chow mein & Paneer Chilli Recipe
For Boiling the Chow Mein
- 2 Packets Thin chow mein
- 4 Cup Water
- ½ tsp Salt
- ½ tbsp Vegetable oil
Chow Mein Preparation
- ½ tsp Salt (As per the taste )
- ½ tbsp Vegetable oil
- ½ tsp Black pepper powder
- ½ tsp Chopped garlic
- ½ tsp Chopped ginger
- 1 Piece Slit green chilli
- ¼ Cup Chopped capsicum
- ¼ Cup Chopped cabbage
- 2 tbsp Chopped carrot
- ¾ Cup Chopped onion
- 1 tsp Vegetable oil
- ½ tsp Soy sauce
- ½ tsp Chilli sauce
- ¼ tsp White vinegar
- 1 tsp Red chilli sauce
- 1½ Cup Boiled Chow Mein
- 1 tbsp Chowmein masala (Optional )
Paneer chilli Marination
- 100 gm Paneer ( cottage cheese ) (Diced into cubes )
- ¼ tsp Kashmiri red chilli powder
- ¼ tsp Black pepper powder
- ¼ tsp Chow mein masala (Optional )
- ¼ tsp Salt
- 1 tbsp Maida (All purpose flour)
- ½ tsp Corn flour
- ½ tsp Oil (Optional )
- 2 tbsp Water
Paneer chilli Preparation
- 100 gm Paneer marinade
- 1 tbsp Oil (For shallow frying )
- ½ tsp Chopped ginger
- ½ tsp Chopped garlic
- 2 tbsp Diced Onion
- 2 tbsp Diced Capsicum
- 2 tbsp Thinly sliced carrot
- 1 Piece Slit green chilli
- 1 Cup Corn starch and water solution
- ½ tsp Soy sauce
- ½ tsp Chilli sauce
- 1 tsp Tomato sauce
Chow Mein Preparation
In a saucepan add salt, oil, and boil it, when water starts to boil add two packets of chow mein and cook them.
Strain chow mein then add salt, black pepper powder & oil, mix them well.
In a wok saute some ginger, garlic, chilli, onions, capsicum & carrot unless then turns little soft.
Add cabbage and stir fry them.
Add all the sauce & white vinegar and mix them well.
Add chow mein and fry them, along with sauces.
The recipe is ready to be served.
Paneer chilli Preparation
In a bowl add 100 gm of cottage cheese, black pepper powder, kashmiri red chilli powder and salt mix them well.
Add 1 tbsp of refined flour & 1 tsp of corn starch and mix them adding 1 tbsp of water and keep it aside for 30 minutes for marination.
In a wok add 1 tbsp of oil & fry the marinated paneer cubes & let them turn crispy. (Note : As we are not deep frying it so it is necessary to fry them with patience.
Take them out when it turns golden and crispy.
In a wok add 1 tsp of oil fry chopped ginger, garlic, onion, capsicum, slit green chilli and carrot.
Add corn starch solution and all the sauces mix them well, then add paneer cubes, a dash of salt mix them well.
The recipe is ready to be served.
