Aloo baigan ki bhujiya | Potato Brinjal stir fry

Today I am sharing a very simple and delicious recipe of potato and brinjal or eggplant stir fry. This is the best side dish which can go well with rice or chapatis, whenever I feel loath and I don’t want to cook something heavy this is my choice. Let’s learn step by step how to prepare this simple delight.

 

Aloo baigan bhujiya

  • 2 Piece Potatoes (Sliced )
  • 3 Piece Small size brinjal
  • ½ tsp Salt
  • ½ tsp Turmeric powder
  • ½ tsp Coriander powder
  • ½ tbsp Mustard oil
  • 1 Piece Green chilli (Slit)
  • 1 Piece Onion (Sliced )
  • ½ tsp Ginger & garlic paste
  1. Slice and chop the veggies like brinjal, potato, onion & green chilli.



  2. In a wok add 1/2 tsp of mustard oil heat it.



  3. Add potato and brinjal fry them then add green chilli and sliced onion rings.



  4. Add ginger and garlic paste, stir fry them, then add salt, turmeric powder & coriander powder.



  5. Mix them well, cover the lid and cook it for sometimes.



  6. Serve it hot with chapatis.
