Bihari Style Gatte ki Sabji | Very Spicy & delicious
Gatte ki sabji is a popular gravy based dish from the Rajasthani cuisine. Gatte meaning something which is in the form of a knot, but here we generally see the cylindrical form of gram flour having the concoction of several spices dipped in a gravy of tomato, garlic and curd. There are many variations of making Rajasthani gatte ki sabzi. In Bihar we prepare this sabji with onion and garlic with some spices, but curd is not added instead tomatoes are added into it, but today in this version I am not even adding tomatoes, as tomatoes make it slightly light but I need more spicy version today.
Gatte ki sabzi can be served with chapati, paratha, naan and can also be had with plain steamed rice. I have made this recipe in the authentic Bihari version. Now let’s learn step by step process to prepare this recipe.

Gatta Spice Mix Ingredients
- 1 tsp Coriander seeds
- 1 tsp Carom seeds
- 1 tsp Cumin seeds
- 1 tsp Fennel seeds
Gravy Spice Mix Ingredients
- 5 Pieces Garlic pods
- 5 Pieces Green chillies (Adjust as per your taste )
- 1 tsp Cumin seeds
- 5 Pieces Black peppercorn
Gatta Preparation Ingredients
- ½ tsp Ginger and garlic paste
- ½ Cup Gram flour
- 1 tsp Salt (As per the taste )
- 1 tsp Spice mix
- ½ tsp Turmeric powder
- 1 tsp Kashmiri red chilli powder
- 1 tsp Coriander powder
- 1 tsp Clarified butter
- 2 tbsp Curd
Gatta Curry Preparation Ingredients
- ¼ Cup Mustard oil (For frying gatta and 1 tbsp of mustard oil )
- 1 Piece Each bay leaf and dried red chilli
- 1 Piece Crushed cardamom, cinnamon sticks, bay leaf
- ½ Cup Chopped onion
- 2 tbsp Grind ingredients of gravy spice mix
- ½ tsp turmeric powder
- 1 tsp Coriander powder
- 1 tsp Kashmiri red chilli powder
- 1 tbsp Kitchen king masala powder or sabji masala powder
Spice mix preparation
Crush the ingredients like coriander seeds, cumin seeds, fennel seeds & carom seeds in the traditional mortar.
In a bowl add ½ cup of gram flour, all the spices, 1 tsp of crushed ingredients, salt, curd, clarified butter & ½ tsp of ginger and garlic paste.
Mix the ingredients and prepare a dough.
Prepare the gatta as shown.
Take 3 cups of water in a wok and boil it, add all the gatta.
When gatta starts floating on the water and bubbles start appearing on gatta then it is done.
Let it cool down and cut into small pieces.
Fry them and keep them aside.
Gravy spice mix
Take a grinding jar, add all the ingredients like green chilli, garlic, cumin and black peppercorns. Prepare the rough paste.
Prepare the gatta curry
In a wok add crushed black cardamom, cinnamon, bay leaf let them splutter.
Add chopped onion and grind ingredients fry them, then add dry spices and salt.
Add gatta, then add water and let it get it adust the consistency, cover, and cook for 20 minutes.
Garnish it with chopped coriander leaves and serve it.
