Biryani Style Vegetable Masala Khichdi Recipe

So this recipe can be cooked for either brunch, lunch, or dinner. This is really fantastic version for those lazy days when you don’t want to cook several things for lunch or dinner, just this rice dish along with some raita, chutney, or salads and you are good to go. Biryani Style Vegetable Masala Khichdi Recipe
For Biryani style vegetable masala khichdi
- 5 Pieces Soya chunks
- ¼ Cup Rice
- ½ tbsp Biryani Masala powder
- 1 tsp Turmeric powder
- 1 tsp Salt (As per the taste )
- 1 tbsp Clarified butter
- ½ tsp Cumin seeds
- 1 Piece Green cardamom
- 1 Piece Star Anise
- 1 Piece Cinnamon Stick
- 2 Pieces Cloves
- 2 Pieces Black peppercorn
- 1 Piece Black cardamom
- 1 Piece Green chilli (Chopped)
- 1 Piece Small sized onion (Roughly diced)
- ⅓ Cup Beans
- 1 Piece Small potato diced
- ¼ Cup Chunks of carrot
- 1 Piece Tomato chopped
- ¾ Cup Chopped beetroot
- ½ Inch Radish Chunk
- 3 tbsp Gram lentils
- 1 tbsp Chopped coriander leaves
- 1 tsp Mint leaves (I am using dried leaves )
For the marinade
- ½ Cup Curd
- ¼ Cup Cottage cheese (Paneer)
- 1 Pack Maggi masala powder
- 1 tsp Kashmiri Red chilli powder
- ½ tbsp Biryani masala powder
Marinade preparation
In a bowl add ½ cup of curd, whisk it then add diced chunks of paneer.
Add spices like sabji masala or maggi masala, biryani masala and kashmiri red chilli powder, mix it and keep it aside for the marination.
Biryani style vegetable masala khichdi
In a cooker add clarified butter and all the raw hot spices, let them splutter. Add chopped onion and green chilli, when they turn soft add all the veggies and fry them.
Add salt and turmeric powder, lentils mix it, then add the marinade and mix it well.
Add rice, coriander leaves, mint leaves, biryani masala powder and 1/2 cup of water, pressure cook it on medium flame for 20 minutes or wait for 1 whistle.
After a whistle the recipe is ready.
Recipe is ready to be served.
