Gur Khurma / Gur Para or Gur Pare Recipe is prepared with all-purpose flour(Maida) or wheat flour, coated in jaggery syrup and flavoured with cardamom and fennel seeds. I am preparing this recipe with wheat flour which is more healthy, it is a quick and easy festival sweet. During the festivals like Diwali, Holi, Dussehra etc. generally, there are lots of household chores which make it tough to invest an immense amount of time in the kitchen, hence women prepare such snacks to serve the guests instantly. It is an authentic and appetizing dish of Bihar, U.P. and Punjab, that is made on special occasions. It’s a traditional deep-fried sweet made with wheat flour, flavoured with fennel seeds and later sweetened with jaggery (Gur) or sugar. Here I am using jaggery and wheat flour. Let’s learn step by step process to prepare this recipe.

- 2 Cup Wheat flour
- ¼ Cup Jaggery
- 1 tsp Cardamom Powder
- 1 tbsp Fennel Seeds
- 2 tbsp oil (For dough preparation )
- ⅕ Cup Water (For dough preparation )
- 2 Cup Oil (For Frying )
Take 2 cups of wheat flour in a container add 2 tbsp of oil, 1 tsp of cardamom powder and mix them well, when flour gets a binding consistency, then add water and knead a dough.
Rest the dough for half an hour by covering it with a damp cloth.
With the help of rolling board and pin, prepare a thick flatbread.
Cut them using a knife as shown here.
In a wok heat 2 cups of oil.
Fry them.
Put them aside so that they can cool dow.
In a wok add ¼ th cup of jaggery and 2 tbsp of water.
Prepare the jaggery syrup.
Check the consistency of it by putting a drop of it into a bowl of water, if it gets a crystaline form then the syrup is ready.
Transfer the syrup in the container of Khurma, add fennel seeds and mix them unless crystallization happens.
The recipe is ready to be served, preserve it in an airtight container and use it for more than a year.
