Makhana (Lotus seeds,Fox nut) Curry Recipe
Makhana is considered as non grain and eaten during fast, but this time I am preparing a curry recipe using these nutritious seeds, this curry is very delicious and one can enjoy this recipe with rice or chapatis. Makhana is aquatic crop which is harvested and cultivated in several districts of northern Bihar (India). It is highly nutritious and considered as super food.
Makhana (Lotus seeds,Fox nut) Curry Recipe
- 1 cup Makhana (Lotus Seeds)
- 1 tsp Cumin Seeds
- 2 tbsp Mustard Oil/Clarified Butter
- 1 cup Chopped Tomatoes
- 1 tsp Chopped Green chili
- 1 tbsp Cashew nuts
- 1 tbsp Poppy Seeds
- 1 tbsp Turmeric Powder
- 1 tbsp Kashmiri mirch powder
- 1 tbsp Salt (As per the test)
- 1 tbsp Sabji masala powder
- 1 tbsp Coriander Powder
- 1 tbsp kasoori Methi (Dried Fenugreek Leaves)
- In a pan add cumin seeds and let it splutter.
- Add mustard oil in the pan along with chopped tomatoes and chopped green chili and let it turn soft.
- When the ingredients turns soft turn off the flame and let it cool down. In a grinding jar add these ingredients along with poppy seeds and cashew nuts and grind them.
- In a pan add makhana and cashew nuts dry roast them.
- In a pan add the grind ingredients and cook it for sometimes.
- In the same pan add turmeric powder, kashmiri mirch powder, salt, coriander powder and sabji masala powder.
- In the same pan add kasoori Methi (Dried Fenugreek Leaves).
- In the same pan add roasted makhana and cashew nuts and cook them together, if required add a cup of water.
- When the consistency is similar as shown in the image.
- Serve it along with rice or any flat bread.
