Sambhar Recipe | ऐसा सांभर कभी नही खाया होगा आपने

Sambhar is a south Indian cuisine made with lentils, tamarind and a unique spice blend called sambar powder or sambhar masala. It is basically served with rice, idli, uttapam, upma, vada and dosa. It is a very healthy and nutritious recipe which is protein-rich and packed with the goodness of assorted veggies such as bottle gourd, drumstick, pumpkin etc. It can be made by using all the veggies or in a combination of one or two. The preparation of sambhar also varies from place to place in the south there are various variations of this recipe, which even varies in taste and flavours and its method of preparation. Today I am sharing the common and basic version of this recipe which is vegetable sambhar. Let’s learn step by step process to prepare this recipe.

  • 1 Cup Pigeon pea lentils
  • 1 tbsp Tamarind
  • 1 tbsp Salt
  • 1 tbsp Turmeric powder
  • 2 tsp Red chilli powder
  • 1 Piece Dried raw red chilli
  • 1 tbsp Black mustard seeds
  • 1 tbsp Mustard oil
  • 1 tsp Cumin seeds
  • 1 tbsp Garlic cloves
  • 1 tbsp Curry leaves
  • 2 tbsp Chopped tomatoes
  • 1 Piece Big sized chopped onion
  • 1 tbsp Slit green chilli
  • 2 tbsp Any veggies of your choice like pumpkin, carrot, bottle gourd etc
  1. Take the lentils and soak in water for 20 minutes.



  2. Take soaked tamarind and mash it with hand.



  3. Use a strainer to get out the pulp and juice from the tamarind.



  4. Transfer the juice and pulp in another container.



  5. Transfer the lentils in a pressure cooker add 3 cups of water into it, add salt and turmeric powder.



  6. Pressure cook the lentils with 4 whistles.



  7. Take a wok and add 1 tbsp of mustard oil into it.



  8. Add mustard seeds and let it splutter.



  9. Add dried red chillies and cumin seeds.



  10. Add green slit chillies and curry leaves into the wok.



  11. Add chopped tomatoes, onion and veggies of your choice.



  12. Cook it via covering the lid.



  13. Add turmeric powder, salt red chilli powder into it.



  14. Add drum sticks and stir fry them all together.



  15. Add sambhar masala powder into the wok.



  16. Transfer lentils into the wok.



  17. Either cook it for 20 to 25 minutes this way.



  18. Or pressure cook it with 4 whistles to get it done quickly.



  19. Add chopped coriander leaves into the wok.



  20. The recipe is ready to be served.
