Aloo Baigan (Brinjal) badi ki sabzi is a comfort vegetarian side dish that can be served with roti (chapatti), paratha, or any rice dishes. I am sharing the Bihari style curry which is imbibed with aromatic spices.Basically panchphoran, mustard paste, and tanginess of mango powder, tamarind, or lemon juice ( choose any one of them).

Panchphoran consists of Cumin seeds, Brown Mustard seeds, Fenugreek seeds, Nigella and Fennel seeds. Along with the yellow mustard seeds paste spice mix is an authentic spice mix of the Eastern part of India including Bihar.

Spice Mix

  • 2 Pieces Tomatoes
  • 2 Pieces Green chilli
  • 8 Pieces Garlic pods
  • 1 Inch Ginger
  • 1 tsp Coriander seeds
  • 1 tsp Yellow mustard seeds

Curry Preparation

  • 1 tbsp Mustard oil
  • 1 tsp Panchphoran (Cumin seeds, Brown Mustard seeds, Fenugreek seeds, Nigella and Fennel seeds)
  • ½ Cup Badi
  • 1 Piece Peeled and diced potato
  • 1 Piece Medium-Sized brinjal (eggplant)
  • 1 Cup Spice mix
  • 1 tsp Turmeric powder and salt to taste
  • ½ tsp Kashmiri red chilli powder
  • 1 tsp Sabji masala powder
  • 1 tsp Lemon juice (For garnishing )
  • 1 tbsp Coriander leaves (For garnishing )
  • 2 Piece Bay leaf
  1. Take tomatoes, ginger, garlic, green chilli, coriander seeds, and yellow mustard seeds in a grinder jar and make a paste.



  2. The spice mix is ready.



  3. In a cooker add 1 tbsp of mustard oil and fry potato and brinjal. keep it aside when turns golden.



  4. Fry badi and keep it aside when turned golden.



  5. In the same cooker add panchphoran, bay leaves, spice mix, and fry unless oil separates. Add 1 tsp of salt and turmeric powder.



  6. Add Kashmiri red chilli powder, 1/2 tsp of garam masala powder and 1 tsp of sabji masala powder and mix it well. Then add fried potato, brinjal and badi.



  7. Add 1/2 cup of water and pressure cook it with 2 whistles on a medium flame.



  8. Serve it with rice or roti as per your choice.
