Baigan Badi (बैगन बड़ी) Curry Recipe

Baigan badi (बैगन बड़ी) is a famous recipe of the eastern part of Indian subcontinents, nowadays due to spread of culture, this delicacy is famous in all over India. You can use any badi available with you, especially it is made up of split black lentils cooked along with the eggplant. Let’s learn a very simple way to prepare this recipe.

Baigan Badi (बैगन बड़ी) Curry Recipe

  • 1 cup Diced eggplant
  • 2 tbsp Diced potatoes
  • 2 tbsp badi
  • 2 tbsp Chopped Onion
  • 2 tbsp Chopped Tomatoes
  • 1 tsp Chopped Green chili
  • 1 tsp Chopped Garlic
  • 1 tsp Salt (As per your taste)
  • 1 tsp Turmeric Powder
  • 1 tbsp Sabji masala powder
  • 1 tbsp Coriander Powder
  • 1 tsp Chopped Coriander leaves
  • 1 tsp Garam Masala Powder
  • 2 tbsp Mustard Oil
  • 1 tsp Cumin Seeds
  1. Heat oil in a pan and fry badi, chopped potatoes and eggplant, unless they turn golden brown.

  2. Heat 1 tsp of oil, add cumin seeds followed by chopped onion and sear them unless they turn golden brown.

  3. Add chopped garlic and green chilli and let them cook unless the rawness vanishes.

  4. Add chopped tomatoes in the pan and cook them unless they turn soft.

  5. Add fried badi, potatoes and eggplant in the pan.

  6. Add salt, vegetable masala powder, turmeric powder and coriander powder in the pan.

  7. Mix them well unless aromatic flavor emits from the spices.

  8. Add a cup of water in the pan followed by garam masala powder and cook them by covering the lid.

  9. Garnish it with coriander leaves and the recipe is ready to be served.
