Dark Gur khurma Recipe
Gur Khurma / Gur Para recipe is prepared with all-purpose flour(Maida) or wheat flour, coated in jaggery syrup and flavored with cardamom and fennel seeds. I am preparing this recipe with wheat flour which is more healthy, it is a quick and easy festival sweet. During the festivals like Diwali, Holi, Dussehra, etc. Generally, there are lots of household chores that make it tough to invest an immense amount of time in the kitchen, hence women prepare such snacks to serve the guests instantly. It is an authentic and appetizing dish of Bihar, U.P., and Punjab, that is made on special occasions. It’s a traditional deep-fried sweet made with wheat flour, flavored with fennel seeds, and later sweetened with jaggery (Gur) or sugar. Here I am using jaggery and wheat flour. Let’s learn step by step process to prepare this recipe.

Dark Gur khurma Recipe
- 1 Cup Wheat flour
- 2 tbsp Clarified butter
- 2 Cup Oil For frying
- 2 Pieces Crushed cardamom
- 1 tbsp Fennel seeds
- ½ Cup Jaggery
In a bowl add 1 cup of wheat flour, add clarified butter, and with the help of water prepare the dough. Keep it aside for 30 minutes.
With the help of a rolling board and rolling pin prepare the flatbreads
Cut it in the desired shapes.
Heat the oil and fry all the shapes of nimki.
Put it aside and let it cool down.
In a wok add ½ cup of dark jaggery and add 2 tbsp of water to prepare the syrup. Add cardamom powder or crushed cardamom just for the flavour.
Check if it is done, by adding a drop of it into a bowl of water, if it gets a crystal form then it is done.
Switch off the flame and add fried nimki into it and coat the gur para.
Add fennel seeds and mix them well unless everything becomes dry.
Recipe is ready to be served.
