Gatte Ki Sabji | बेसन के गट्टे| Gatte Ki Sabzi | Gatta Curry

Gatte ki sabji is a popular gravy based dish from the Rajasthani cuisine. Gatte meaning something which is in the form of a knot, but here we generally see the cylindrical form of gram flour having the concoction of several spices dipped in a gravy of tomato, garlic and curd. There are many variations of making Rajasthani gatte ki sabzi. In Bihar we prepare this sabji with onion and garlic with some spices, but curd is not added instead tomatoes are added into it.

Rajasthan is an Indian state with a large amplitude of desert. The dearth of vegetables gave rise to more dependence on dishes made from pulses, milk and other non-perishable food items. This has resulted in some very impeccable and appetizing regional cuisine which is famous as Rajasthani cuisine.

Gatte ki sabzi can be served with chapati, paratha, naan and can also be had with plain steamed rice. I have made this recipe in the authentic Rajasthani version but soon I will share authentic Bihari version of this recipe. Now let’s learn step by step process to prepare this recipe.

 

Gatte Ki Sabji | बेसन के गट्टे| Gatte Ki Sabzi | Gatta Curry

Gatta Spice Mix Ingredients

  • 1 tbsp Coriander seeds
  • 1 tsp Celery seeds
  • 1 tbsp Cumin seeds
  • 1 tsp Fennel seeds

Gatta Preparation Ingredients

  • 1 Cup Gram flour
  • 1 tsp Salt
  • 1 tbsp Gatta spice mix
  • ½ tsp Turmeric powder
  • 1 tsp kashmiri red chilli powder
  • ½ tsp Coriander powder
  • 1 tbsp Clarified butter

Gravy Spice Mix Ingredients

  • 5 Pieces Garlic pods
  • 2 Pieces Green chilli
  • 1 Piece Tomato (Chopped)
  • 1 Inch Ginger

Curd Based Gravy premix Ingredients

  • ½ Cup Curd
  • ½ tsp Turmeric powder
  • ½ tsp Cumin powder
  • 1 tsp Kashmiri red chilli powder
  • 1 tsp Kasoori methi (Rosted and crushed with hand )
  • 1 tsp Slat (salt at every stage may make your recipe salty hence add salt directly in the end when everything get prepared )

Gatta Curry Preparation Ingredients

  • 2 tbsp Mustard oil (Use clarified butter for better taste)
  • ½ tsp Gatta spice mix
  • 1 Piece Each bay leaf and dried red chilli (All are optional )
  • 1 cup Gravy spices
  • ⅔ Cup Curd based spice premix
  • 2 Cup Gatta with its stock
  • 2 tsp Salt (As per your taste )

Tempering Preparation Ingredients (Totally optional step)

  • 1 tsp Either cumin or the gatta spice mix
  • 1 tbsp Clarified butter
  • 1 tbsp Kashmiri red chilli powder

Gatta Spice Mix

  1. Take all the ingredients into a mortar and crush them.



  2. The spice mix is ready to be used.



Gatta Preparation

  1. In a bowl add gram flour, spice mix, turmeric powder, salt, cumin powder and kashmiri red chili powder.



  2. Add clarified butter and mix them with hand. (this step will make your gatta very soft)



  3. Dough is ready, so apply little oil over that.



  4. Prepare the gatta shapes by placing the dough on the kitchen platform.



  5. All the gatta is ready now.



  6. In a wok add water let it turn hot then add gatta.



  7. Put the lid on and cook it for some time, then check it by removing its lid.



  8. When gatta gets bubbles on it, it means they got cooked.



  9. Transfer them into a container and cut them.



  10. You can even remove them from water and cut them and the gatta is ready



Gravy Spice Mix

  1. In a grinding jar add garlic pods, green chilli, ginger and tomato.



  2. Grind them to form a paste. The spice mix is ready.



Curd Based Gravy Premix

  1. In a bowl add curd and all the spices like salt, turmric powder, kashmiri red chilli powder, kasoori methi and cumin powder.



  2. Whip them to form a smooth paste.



Gatta Curry Preparation

  1. In a wok add gatta spice mix then add mustard oil and let them splutter, if you want then add dried red chilli and bay leaf as well.



  2. Add gravy masala and fry them unless the oil separates.



  3. Add curd based spice premix and fry them all together unless fragrant.



  4. Fry them well and you will notice bubbles in the gravy it means, its time to add gatta and its stock.



  5. Add salt and mix them well.



  6. Put the lid on and let it cook, and meanwhile prepare the tempering.



Tempering Preparation (Optional)

  1. In a ladle add spice mix



  2. Add clarified butter.



  3. Add Kashmiri red chilli powder.



  4. Transfer it into the wok.



  5. Mix them well.



  6. Recipe is ready.
