Homemade Khoya Pedakiya/Gujiya Recipe

Holi is also known as spring festival of Hindus, and colors indicate the significance of mother nature which is proclaimed in the form of colorful flowers, aromatic fruits and chirping of birds. Holi is the beginning of Hindus new year, and how this new year can be announced without delicacy of Pedakiya! So I thought to prepare Pedakiya but while my visit to the sweet shop I got stuck in a long queue to buy khoya (Dried Whole Milk) so thought to give it a try and now I think I am successful in making this delicious sweet-dish with home made khoya. Let’s learn step by step process to prepare this recipe.

Homemade Khoya Pedakiya/Gujiya Recipe

  • 1 cup Refined flour (Maida)
  • 3 cup Clarified butter (Ghee) (For both frying and mixing in dough)
  • 1 tbsp Dry fruits like resins, almonds, cashew nuts
  • 1 tsp Cardamom Powder
  • 2 tbsp Sugar
  1. In a container take refined flour and add a tbsp of clarified butter.
  2. Using hand mash or mix the dry flour with clarified butter so that both can form a consistency as shown in the image.
  3. Use water and prepare a dough in such consistency that no extra flour or oil would be needed while preparing flatbread.
  4. Cove the dough with wet cloth and let it rest for 10 minutes.
  5. Take home made khoya.
  6. In a pan add dry-roasted cashew-nuts, almonds and resins, add khoya and mix them well.
  7. Add sugar and mix them well.
  8. Switch off the flame as the recipe is ready to be served.
  9. With the help of rolling board and rolling pin prepare the flatbread as shown in the image.
  10. Add the filling and cover it as shown in the image.
  11. The name pedakiya suggests its designs on the edges of each dumplings, I have tried some of them which I learnt from my mom and granny.
  12. This pattern is for chandra kala recipe but I’ve tried it for pedakiya.
  13. After this art work let it cover with damp cotton cloth.
  14. Heat clarified butter in a frying pan.
  15. Deep fry them as shown in the image.
  16. After it cools down then serve it or you can preserve it in any airtight container.
