Mixed vegetable Pasta Soup | Healthy Vegetarian Soup | Quick soup without mess

To begin with, I would like to say, that soup is our daily routine recipe, either in lunch or dinner, even I try and play with several ingredients while preparation of the recipes in hand, so my recipe is authentic and very basic no doubt delightful as well. Today I am going to share a very common recipe that is included in our daily meal. This Easy Vegetable Pasta Soup is a healthy and simple meal to make any night of the week. There are no complicated ingredients needed to make this veggie and pasta soup recipe. Also, you can add in whatever veggies you have on hand! I personally used even the stems and roots of the veggies in hand. You can use vegetable stock and this would be a vegetarian recipe. Lastly, you could add in some canned beans and call this a version of pasta, which is an Italian soup made from pasta and beans. Basically, this recipe is very forgiving and customizable! I am sharing my basic recipe just for making it easy for your all to try it. No broth and beans here, just simple water and a few ingredients, on low flame to make it rich and tasty.

  • ¼ Cup Assorted veggies (Any veggies of your choice )
  • ½ tbsp Chopped ginger and garlic
  • ¼ tbsp Chopped onion
  • 1 tbsp Chopped coriander leaves
  • ½ tsp Salt (Or as per the taste )
  • ¼ tsp Black pepper powder (Crushed black pepper will also work )
  • ½ tsp Any spice mix ½ (Either sabji masala, garam masala powder, or coriander powder or you can use all of them)
  • ½ tsp Oil
  • ⅓ Cup Boiled pasta (Take any pasta of your choice, or any assorted pasta)
  • ½ Cup Solution of water and ¼ tsp of cornstarch
  1. Take all the assorted veggies and keep it aside.



  2. Boil the assorted pasta.



  3. In a wok add ½ tsp of oil, add chopped ginger and garlic, saute it, then add chopped onion.



  4. Add other chopped veggies and fry unless soft.



  5. Add 1 liter of water, then add salt to taste and black pepper powder mix it well and cover it to cook for a few minutes.



  6. Add boiled pasta into the wok.



  7. Cover and cook it for a few minutes, then add spices of your choice.



  8. Add the solution of water and cornstarch.



  9. Mix it well and cook for another few minutes. then garnish it with coriander leaves and serve it.
