Paneer Ghee Roast | पनीर घी रोस्ट

Paneer Ghee Roast is a very popular Mangalorean dish and is an infinite glee while eating. Duce it with Chapati, Rice, Neer Dosa or Appam and it makes a magnificent meal. It can also be enjoyed as a snack, it can be dry or semi-gravy, the choice is yours!!

This recipe hails from a small town called Kundapur near Mangalore. The ghee flavoured red-hot, spicy, tangy dish soon became very popular and travelled to other places. The original version was actually made using chicken, fish, prawns etc, and eventually, the Veg version too emerged which I will be sharing today. The basic masala (Spice mix) for all versions remains the same and the authentic version is actually very spicy. Paneer ghee roast can be made in the dry form to serve as an appetizer or in the gravy form to serve as a main course dish. So, let’s learn step by step process to prepare this recipe.

Paneer Ghee Roast

  • 100 gm Paneer (Cottage cheese)
  • 7 to 10 Piece Dried Red Chilli
  • 1 tsp Coriander seeds
  • 1 tsp Cumin seeds
  • 1 tsp Fennel seeds
  • 2 Piece Cloves
  • ⅓ tsp Black pepper corn
  • 4 tbsp Clarified butter (For everytime we have to use in this recipe )
  • ½ Inch Ginger
  • 8 Pieces Garlic cloves
  • 1 tbsp Tamarind juice
  • ¼ Cup Chopped onion
  • ½ tsp Turmeric powder
  • 1 tbsp Jaggery
  • 1 tbsp Salt
  • ¼ Cup Curd
  1. In a wok add all the dry ingredients like dried red chilli, coriander seeds, cumin seeds, cloves, black peppercorn, fennel seed.



  2. Add 1 tsp of clarified butter, ginger and garlic, fry them.



  3. Transfer them into a grinding jar and add 1 tbsp of tamarind juice, grind them to form a smooth paste.



  4. In a wok add 1 tbsp of clarified butter fry the cottage cheese.



  5. Remove it from the wok put it aside.



  6. In the same wok add 1 tbsp of clarified butter, fry the onion.



  7. Add turmeric powder and mix it well.



  8. Add grind ingredients into the wok and fry them unless the clarified butter separates.



  9. Add jaggery into the wok and mix them well.



  10. Add curd into the wok and mix them well.



  11. As I am making it in a dry version so I am not keeping the gravy in this dish.



  12. Add cottage cheese into the wok.



  13. Mix them and fry them well.



  14. Serve it with anything you want, I am serving it with parathas.
