Thekua ( Khajur) Recipe

Thekua is very famous recipe of Bihar (India). This recipe is associated with Chath Puja, but generally people prepare this recipe when they are travelling, or they keep it as evening snacks. During festival it is prepared in several ways, like with jaggery, dryfruits, or with sugar and concoction of dryfruits. Here I’m using jaggery, wheat flour, desiccated coconut to prepare this famous thekua recipe.

Thekua ( Khajur) Recipe

  • 2 cups Wheat flour
  • 1 cup Jaggery
  • 1 cup Vegetable Oil/Ghee (Clarified Butter) (For frying and for dough)
  • 1/2 cup Water
  1. Take wheat flour sieve it if you want.
  2. Take jaggery and add half a cup of water and let it turn liquid or grate jaggery and add water.
  3. Add two tbsp of ghee in wheat flour and mix it for 10 minutes, then add jaggery water and mix it.
  4. Add desiccated coconut in the same container keep mixing it, add more jaggery water and mix it, but do not make it dough, it should be in such consistency so that it can get bind easily.
  5. Make the shapes as shown in the image by dividing the dough.
  6. If you have shape maker then use it otherwise with the help of fork form the shapes.
  7. Prepare thekua as shown in the image.
  8. Heat oil and on medium to low flame fry thekua. You can even bake it on 180 degree centigrade for 15 to 20 minutes.
  9. It should look golden brown from both the sides as shown in the image.
  10. Put it on either kitchen towel or strainer.
  11. Serve it with either pickles or yellow pea chola.
  12. It can be reserved in an airtight container.
