Potato Eggplant (Aloo Baigan) Bhujia/Bhujiya Recipe

Potato Eggplant (Aloo Baigan) Bhujia Recipe
- 1 cup Sliced Potatoes
- 1 cup Sliced Eggplant
- 1 tbsp Salt
- 1 tbsp Turmeric Powder
- 2 tbsp Mustard Oil
- Take sliced potatoes as shown in the image.
- Take a pan and heat mustard oil in it and add potatoes.
- As Potatoes turns golden brown add sliced eggplant.
- Now add salt and turmeric powder into it.
- When both the ingredients get cooked it will look exactly as shown in the image, so garnish it with coriander leaves.
