Aloo tamatar ki sabji | Potato tomato curry

Potato & tomato curry is an easy and simple gravy based curry recipe made with boiled potatoes and tomatoes along with some spices. it is an ideal day to day curry recipe which can be made in no time and can be served with poor(puffed bread), roti, chapati or boiled rice,  flavoured rice recipe etc. The recipe can be made dry or gravy version, but this recipe is dedicated to the semi gravy version. It is a simple, comforting and easy to make dish which is regularly cooked in Eastern part of India or Northern Indian households. It is made by cooking potatoes in a simple tomato curry. It is not only flavorful and delicious, but it is also a quick fix solution when short of time or when short of vegetables in the kitchen.

I still remember it was a Sunday breakfast dish of our college days, and I love having it every Sunday with lip-smacking pickles and puri. Its taste is little tangy and due to thick gravy, it just melts in the mouth. Let’s learn step by step process to prepare this recipe. Another good thing about this dish is that you can make the curry of the desired consistency as per your preference. This curry is a common part of the food served in Indian marriages and ceremonies. This recipe is also common during Navratras as it has no onion and garlic.

Aloo Tamatar Ki Sabji

  • 1 Piece Tomato Roughly chopped (Medium size )
  • 1 Piece Onion Roughly chopped (Medium size )
  • 1 Piece Tomato for grind ingredients
  • 5 Pieces Garlic cloves for grind ingredients
  • 4 Pieces Black pepper corn for grind ingredients
  • ½ tsp Cumin seeds for grind ingredients
  • ½ Inch Ginger for grind ingredients
  • ½ Piece Onion for grind ingredients
  • 2 Piece Green chilli for grind ingredients
  • ½ tsp Garam masala powder
  • ½ tsp Cumin seeds
  • ½ tsp Dry fenugreek leaves
  • ½ tsp Turmeric powder
  • ½ tbsp Salt (As per the taste )
  • 3 Piece Boiled potatoes (Roughly broken with hands)
  • ¼ tsp Coriander powder
  • ¼ tsp Sabji masala powder
  • ¼ tsp Red chilli powder (Quantity may vary as per the taste )
  • 1 Piece Bay leaf
  • 1 tbsp Mustard oil
  • 1 tbsp Chopped coriander leaves
  • ¼ Cup Water (May vary for gravy consistency )
  1. Take a chopped onion, chopped tomato and the paste of (½ slice onion 1 tomato, 5 garlic, 4 peppercorn, 2 green chillis, ½ tsp of cumin seeds,



  2. Take all the spices shown here.



  3. In a pan add 1 bay leaf, cumin seeds & oil to splutter them.



  4. Add tomato and fry unless soft, then add onion and fry unless translucent.



  5. Add grind ingredients and fry them unless oil separates.



  6. Add the dry ingredients, and mix them and cook.



  7. Add boiled potato breaking it with hand.



  8. Add salt and mix them well.



  9. Add ⅓ cup of water along with chopped coriander leaves & mix them well.



  10. Garnish it with coriander leaves and serve it.
