Dabeli Recipe and its Spice-mix

Dabeli is the name given to the recipe due to its way of preparation, Dabeli is the Gujarati word for being pressed or pressing. It got its origin in Mandvi, a city of the Kutch region, hence it is also known as Kutchi Dabeli or Kachchhi Dabeli. Nowadays this recipe is also a popular street food of Maharashtra, and generally, people enjoy this recipe as a snack, although it has the ingredients which can pacify the hangar very easily. 

It consists of burger bun which carries mashed potatoes and several chutneys or dips which adds flavour to the recipe along with spicy mixture and seeds of the pomegranate. Let’s learn step by step process to prepare this recipe.

 

Dabeli Recipe and its Spice-mix

For Dabeli Spice-Mix

  • 2 Piece Bay leaf
  • 1/4 tsp Black pepper corn
  • 1 Piece Green cardamom
  • 1 Piece Cinnamon stick
  • 1 Piece Star anise
  • 1 tbsp Coriander seeds
  • 1 tsp Fennel seeds
  • 1 tsp Cumin seeds
  • 1 tbsp Desiccated coconut
  • 1 tsp Kashmiri red chili powder
  • 1 tsp Turmeric powder
  • 1 tsp Salt
  • 1 tsp Amchoor powder

For Dabeli Potato stuffing

  • 1 tsp Cumin seeds
  • 1 tsp Clarified butter
  • 1 tsp Curry leaves
  • 2 tbsp Chopped onion
  • 1 tsp Ginger and garlic paste
  • 2 piece Boiled potatoes
  • 1 tsp Turmeric powder
  • 1 tsp Salt (As per the taste )
  • 1 tbsp Dabeli spice mix
  • 1 tbsp Roasted peanuts
  • 1 tbsp Chopped coriander leaves
  • 1 tbsp Pomegranate seeds

For Dabeli Recipe

  • 1 tbsp Clarified butter
  • 1 Piece Burger bun
  • 1 tbsp Coriander and mint chutney
  • 1 tbsp Tamarind sweet chutney (Sauce)
  • 1 tbsp Potato mix
  • 1 tsp Chopped onion
  • 1 tbsp Sev (Mixture)
  • 1 tsp Pomegranate seeds

For Dabeli Spice mix

  1. In a wok add all the dry raw spices and roast them.



  2. Add desiccated coconut powder, turmeric powder, kashmiri red chili powder, amchoor powder and salt mix them well. then switch off the flame and let them cool down,



  3. Transfer them in a grinding jar and grind them.



  4. Spice mix is ready, one can preserve it in an air tight container for further use.



For Dabeli Potato Stuffing

  1. In a wok add cumin seeds, clarified butter, let it splutter.



  2. Add curry leaves and chopped onion and fry them unless onion turns translucent.



  3. Add ginger and garlic paste into the wok.



  4. Add boiled and mashed potatoes.



  5. Add turmeric powder and salt into the wok.



  6. Add Dabeli spice mix and mix them well.



  7. Add roasted peanuts in the wok.



  8. Add chopped coriander leaves.



  9. Add Pomegranate seeds into the wok and the stuffing is ready.



Dabeli Preparation

  1. Apply clarified butter on the griller (One can even use Griddle or tawa).



  2. Cut the bun from the middle using a knife.



  3. Place it on the griller.



  4. Apply green and sweet chutney on both the sides of bun.



  5. Place dabeli stuffing on the one side of the burger bun.



  6. Put the other half.



  7. Gill it for few minutes.



  8. Place the burger bun in a plate, garnish it with chopped onion, mixture or sev and pomegranate seeds, recipe is ready to be served.
