Kuttu paratha | Buckwheat flour flatbread

Kuttu or buckwheat is nongrain recipe which is generally a fruit seed being cultivated in himalayas region and its ranges like Nepal, Bhutan and India.

The best thing about it is available in low prices and it is even gluten-free so can be eaten by those who are allergic to gluten and even best for weightloss, this recipe is also a very common option during fasting.

Buckwheat contains all nine essential amino acids, which are our body’s building blocks of protein. It is also rich in fibre, antioxidants, and magnesium. Various studies have revealed that eating buckwheat regularly may help improve cardiovascular health, assist in regulating blood sugar and reduce your risk of colon cancer. Buckwheat is rich in complex carbohydrates and is therefore referred to as a pseudocereal.

I am trying a very basic recipe with this that is Kuttu paratha which is a kind of flatbread. Let’s learn step by step process to prepare this recipe.

 

Kuttu paratha | Buckwheat flour flatbread

  • 1 Cup Buckwheat flour
  • 1 Cup Boiled and mashed potatoes
  • 1 tsp Roasted cumin powder
  • 1/2 Cup Roasted peanuts (Coarsely ground )
  • 1 tbsp Chopped coriander leaves
  • 1 tsp Chopped green chilli
  • 1 tbsp Clarified butter (For searing the parathas )
  1. In a bowl add 1 cup of buckwheat flour.



  2. Add Roasted and ground peanuts.



  3. Add roasted cumin powder.



  4. Add rock salt as per the taste.



  5. Add coriander leaves.



  6. Add chopped green chilli.



  7. Add boiled and mashed potato into it.



  8. Adding water prepare the dough.



  9. On a plastic wrap prepare the flatbread.



  10. On the griddle place the paratha and sear it from both the sides.



  11. Kuttu paratha is ready to be served.
