Tricolour Dhokla Recipe

Dhokla is a famous vegetarian recipe of (Gujarat) India. It is traditionally prepared with gram flour, but you can also prepare it with Suji (Semolina) and curd by fermenting it. But here I am using the batter of Rice and lentils. Let’s learn how to add embellishment in this recipe and cook Tricolour Dhokla.

Tricolour Dhokla

  • 1 Cup Spinach (For the purpose of green colour in dhokla)
  • 2 tbsp Red Chili Sauce (For Saffron colour)
  • 2 tbsp Tomato Sauce (For saffron colour)
  • 2 Cup Dhokla Batter
  • 1 tbsp Black Mustard Seeds
  • 1 tbsp Curry Leaves
  • 1 tbsp Turmeric Powder
  • 4 Pieces Garlic
  • 2 tbsp Salt
  1. Take Spinach, add water in it and boil it for 5 to 10 minutes.

  2. Keep the lid on for fast boiling.
  3. Take boiled spinach and add garlic cloves in it.
  4. After it cools down put it in grinding jar and take a Whirl around.

  5. Take the Dhokla batter and add salt in it, divide it into three different bowls for colouring. Add red chilli sauce and tomato sauce in one bowl and on the other add spinach respectively as shown in the image.

  6. If you have Dhokla steamer pot then it's okay, but here I am using a unique setting, take a cooking pot and fill it with water and put one bowl filled with water too. Kindly refer to the image.

  7. Take cake pan or any deep utensil and grease it with ghee or vegetable oil.

  8. Put the cake pan above your setting and pour the first layer of batter that is green.

  9. Cover the lid and steam for 5 minutes.

  10. Similarly, add white layer above green and cook it for 5 minutes with the lid on.

  11. Finally, add saffron colour and again cook it for 5 minutes.

  12. after some time check it with tooth pick or knife, if either of them comes out clear it means your dhokla is ready.
  13. Now prepare the tempering, add oil, black mustard seeds, Cumin seeds, chopped green chili and curry leaves.
  14. Pour the tempering above dhokla.
  15. Put it out and let it cool down.
  16. Slice it in diamond shapes or any shape as per your choice and enjoy.
