I thought to share a very simple quick-fix recipe of Masala Rice which is a quick, easy, and flavorful spiced rice that can be prepared with leftover rice, vegetables, and spices. This is a great kids and adults lunchbox recipe. You can make this rice with freshly cooked rice as well, just make sure rice is completely cooled before mixing with the masala. But in this recipe I am not using pre-cooked rice, rather I am using soaked rice and cooking it in a pressure cooker. I usually prepare this rice with basmati rice but any variety of rice can be used. You can also add roasted cashews or peanuts for the crunch.

Masala Rice can be prepared at brunch, lunch, or dinner as a main dish. You can serve it at a get-together along with pickle, raita, or a bowl of yogurt, according to your choice. This delicious rice recipe would be cherished by adults and kids alike.

It is the Survival recipe for bachelors living away from home, I basically add the most basic of ingredients, it is really easy to make and it is one wholesome meal. I always top the Masala rice with Bhujiya Sev and have Papad and Dahi as a side for this. And if you are a student or a working person living away from home, this will definitely help you cope up with the withdrawal symptoms of Mom’s handmade food.

  • 1 Piece Bay leaf
  • 1 Piece Cinnamon stick
  • 1 Piece Black cardamom
  • 1 Piece Clove
  • 1 tsp Clarified butter
  • 1 Piece Sliced small sized onion
  • ¼ Cup Diced carrot
  • ¼ Cup Sliced capsicum
  • 1 tbsp Chopped tomatoes
  • ½ tsp Turmeric Powder
  • ½ tsp Salt (As per the taste )
  • 9 Piece Garlic pods
  • 2 Piece Green chilli
  • 1 tsp Cumin seeds
  • 5 Piece Black peppercorn
  1. In a jar add garlic pods, green chillies, cumin seeds & black peppercorn, make a coarse paste.



  2. In a cooker add all the raw spices along with clarified butter, then add chopped onion and the rest of the veggies, fry unless soft.



  3. Add soaked and strained rice and mix it well with the veggies, then add water, and its measurement should be one inch above the rice level.



  4. Pressure cook it with one whistle and the recipe is ready. Serve it with pickle, raita or a bowl of yogurt, according to your choice.
